Spotlight Series: The Hestia Veggie

Vietnamese Flavour for Health & Goodness

Peaceful world flavours live in Davie Village at The Hestia Veggie. Eating wholistically, in a way that supports our global community, is an idea for our times. There’s a new spot at 1161 Davie Street to check out. Come along as we learn more about how Vancouver’s vegan restaurant scene is expanding.

Noodles, Veggies & Vegan Meat

The Hestia Veggie is a vegan-lover’s delight, with a menu that advertises itself as vegetarian but leans heavily towards authentic vegan. We spoke with the restaurant’s owner, to find out where The Hestia Veggie idea came from. “My family runs a vegan restaurant in Vietnam and I knew that I wanted to have a place with great flavours and thoughtful preparation in Vancouver. I want to create a space that is safe for everyone — where the idea of embodying peace-of-mind in harmony with all living beings is lived out daily,” Aaron explained.

“Our signature dish is the Hestia Storm Noodle. It’s a delicious combination of kale noodles, cauliflower, carrots, broccoli, mushroom, tofu, vegan meat, and our house-special sauce. We have a full menu of great dishes — from Hanoi Pho with bok choy, to spicy Curry Laksa with mushroom coconut milk and vegan shrimp.

“It’s easy to eat in a way that honours our bodies and the planet. Our passion is to create local accessibility, in ways that are natural and pleasing. Vietnam’s flavour combinations, like cilantro, lime, basil, pickled radish, peanut sauce, simmered vegetable broth — they’re exquisitely perfect in our vegan dishes. We know authentic vegan preparation is key, but the reality is that our dishes are exceptional, with or without knowing the protocols behind them. Everybody wins through great taste!” Aaron said.

Lunch for One & Large Group Catering, Too

Crispy Vegan Duck, Veggie Spring Rolls, Deep Fried King Oyster Mushrooms, Shaken Fries with Truffles — and the Hestia Banana Roll for dessert — these are just a sampling of the expansive menu. The Hestia Veggie features Coconut Coffee, Lychee Iced Tea, Honey Citrus Soda, and several varieties of beer. There are gluten-free options on the menu, and the staff celebrates diversity, as a proud supporter of the LGBTQ+ community.

“Everyone loves Pho,” Aaron told us. “Vegan cooking encourages us to give careful attention to how flavours and textures work together. Our Pho has a thick, fragrant broth with fresh herbs, diced and crushed to give their best flavour, plus our pickled garlic vinegar — it’s exceptional.”
