When Sushi Calls You, Call Tom

We talked at length with Tom Jeon, lead sushi chef and successful restaurateur. He had an amazing story of determination and international success we weren’t expecting. Let’s hear it in his own words. “I came to Canada when I was in elementary school and sort of knew I wanted to be a chef. Over ten years, I worked in sushi restaurants a hundred hours a week, sometimes more. My ambition and drive was unstoppable. My family back at home worried about me, but I made myself some promises. And I kept each promise. Tom Sushi was my first location and I’m proud to say that we’ve been going for five years now and just opened a sister restaurant in the VGH-Mt. Pleasant area,” Chef Tom said. “Our Davie Street flagship location has a very small seating  arrangement. In fact, during our last renovation, we removed  tables even though our staff has grown from just me to 20 full-time employees. Our tables are full, whether during our lunch hours, dinner, or evening. There’s often a first-come-first-serve line patiently waiting. Our pace in the restaurant is quick and our consistent sushi taste, quality, and presentation is our primary focus. We know what our customers have enjoyed in the past and we’re determined to repeat that memory every time they come in or order-out.”

We have smaller portions of exclusive ingredients like blue fin tuna, so friends can add it to their order and try something they might otherwise not include. And our Red Dynamite and Salmon Hako pressed sushi special rolls are very popular,” Chef Tom went on to tell us. “We prepare each order as it’s placed. Nothing is pre-made. And we serve quickly, so the kitchen is moving at a lightning-fast pace. Every order is consistent. At our top dinner hour, we’re preparing up to 40 orders at the same time!” he said.
