Eduard Perrow, owner of España, started working in restaurants while making his way through higher education. But Vancouver’s West End helped him to realize that his mother’s example as a chef was where he wanted to pour his love of fine cuisine and exquisite ambiance.
Perrow explained, “I was working with top chefs in great Vancouver restaurants. Eventually, I realized I knew exactly what created the special kind of restaurant experience that draws a loyal following and grows by word-of-mouth. I’d acquired a specific talent, somewhat accidentally — and I realized that creating a special dining experience on Denman in the West End was what I wanted to do.
“My decision to focus on the foods of Spain was due to a gap in the Vancouver cuisine scene I felt
needed to be filled. Tapas small plates lend themselves to a sense of close friendship. It was easy for me to imagine exactly what feeling I would build around the menu. España’s reception was positive from the day we opened. We’re even a destination restaurant for sommeliers as they learn the fine art of sherries.”
